Gaetano started with Plena Management Company as an early employee in 1981. In his 40+ year career, he has worked in virtually every position in restaurant operations, giving him a deep insight into what is required for an operation to run smoothly and efficiently.
As Sr. Director of Operations, Gaetano oversees multiple franchise locations ensuring they meet goals and KPIs.
Gaetano has a high level of first-hand experience in opening new locations. He has developed staff training and operations protocols and procedures.
Today, Gaetano leads the initiative to implement new technology to help Sedes restaurants take full advantage of the digital age.
